Christmas just isn’t Christmas without whipping up a few burn-the-back-back-of-your-throat Rum Balls. It’s a serious ritual at out place. To me, it just doesn’t feel like Christmas til the kitchen has a layer of coconut all over it, the air whiffs of liquor and I’m scraping sticky, rummy mixture off my hands with my top teeth.
It will take a combination of hunting at your supermarket, local health food shop and online – but with a little persistence and some help from Google – you can indeed make 100% organic rum balls. Yo ho ho! [rss-cut]
You’ll need:
2 cups – crushed organic Weet-bix OR almond meal
1 tin – Sweetened condensed milk OR Sweetened condensed soy milk (for vegan option)
1 1/2 cup – Fine desiccated coconut
1 cup – Shredded coconut
1/4 cup – Rum
2 tablespoons – Cocoa powder
Step 1: completely crush the Weet-bix in a plastic bag – OR (hot tip!) whizz in the blender for a quick crush.
Step 2: mix together weetbix (or almond meal) + cocoa + 1 cup dessicated coconut in a large bowl.
Step 3: Make a well in the center of dry mix and add condensed milk + rum. Mix well with a spoon.
Step 4: Place shredded coconut + leftover desiccated coconut on a plate and mix together.
Step 5: Form balls about the size of a walnut by rolling a blob of mixture between the palms of your hands.
Step 6: Roll balls in coconut mix, rubbing in to coat well, then place on a plate
Step 7: Chill in refrigerator for 12 hours
Step 8: put in your mouth and chew, yum yum yum!
